Jackfruit is delicious whether it is raw or ripe. During the warmer months, jackfruit is eaten raw and prepared like a kanda or chord vegetable. Some people prefer to eat jackfruit nuts raw, while others prefer to prepare them in a curry. Long-term storage in a controlled environment is a significant plus. Commonly, the cells of ripe fruits are consumed. In order to manufacture ”Kanthalstu” similar to Amastava, these cells are crushed to extract the juice and then dried. Today, Thai factories are turning out jackfruit crisps. The cells themselves are nutritious, and the husk and bran (immortal) that remain afterwards make for excellent cattle feed. There is enough pectin in Bhutro or Chhobra to make jelly. Raw honey is sometimes extracted from the pulp or shell. Cattle will happily eat jackfruit leaves as feed. Wooden furniture can be quite expensive. You can patch up damaged wood or containers with pulp from the jackfruit tree.
Raw jackfruit or anchovy. There are numerous devotees of its curry. Raw jackfruit curry with wild rice does not require the addition of fish or meat. Its sambar is delicious. Kantha katal curry has been a Bengali favourite for centuries. The raw jackfruit curry is notably famous in Tangail and the northern regions. Raw jackfruit combined with beef and raw jackfruit combined with prawns is extremely popular. However, only some can enjoy its flavour because they need the proper formulation. Consequently, two such recipes are provided.
Raw jackfruit recipe with prawns
Raw jackfruit 1 (finely chopped),
Shrimp 1 cup,
Half a cup of coconut milk,
1 cup chopped onion,
Turmeric powder 1 teaspoon,
Chilli powder 1 teaspoon,
Coriander powder 1 teaspoon,
½ teaspoon of ginger paste,
½ teaspoon of garlic paste,
3 bay leaves
Salt is like a taste,
half a cup of oil,
6 green chillies,
Grind 2 tablespoons of onion.
First, take oil in a pan and fry the chopped onions until light brown. Add a bay leaf and cardamom powder and mix well with the onion. (Its flavour blends well with the onion) Then fry it with shrimp and fish until red.
You can shake it with salt, ginger, and garlic paste according to taste. Then grind turmeric powder, chilli powder, and coconut milk well with a quarter cup.
Add the raw jackfruit and mix well with the masala when the oil comes to the top.
Cover with half a cup of water and the remaining coconut milk and cook for 25-30 minutes.
Then break the green chillies and the jackfruit with a spoon (this will increase the taste of the jackfruit).
Finally, the water should be dried after roasting the jackfruit. Raw jackfruit will be roasted in this way.
For garnish, you can sprinkle onion slices or coriander leaves on top of it.
