Ingredients:
- Mutton – 1 KG
- Sour yoghurt – 1 Cup
- Ghee or oil as per quantity
- Salt as per need
- Onion Beresta – 1 Cup
- Mawseed Pest – 2 Tablespoon
- Sweet Curd – 1 Cup
- Ginger + Garlic pest – 2 Tablespoon
- Coriander powder – 1 Tablespoon
- Chili Powder – 1 Tablespoon
- Turmeric Powder – 1 Tablespoon
- White Cardamom – 6 Pieces
- Clove – 8 Pieces
- Jayatri powder ½ Teaspoon
- Black pepper – 6/8 Pieces
- Cinnamon – 5 Pieces
- Joyfol ½ Teaspoon
- Cashew nuts & Pesto nuts – 4 Tablespoon
- Milk – 1Cup
- Raisins – 10-12 Pieces
- Alu Bokhara – 6 Pieces
Methodology
First, we have to blend Sweet Curd with Cashew nuts & Pesto nuts and make a pest. Now we have to take a pot and put the mutton. Then marinade properly, gently sour yoghurt, chilli powder, Turmeric Powder, cardamom, cinnamon, black pepper, onion Beresta, Garlic & Ginger Pest, and pest bay leave, cloves, Jayatri & Joyfol powder one by one. Now we have to cover it properly at least for 30 minutes fully.
Then we have to take a new pot in the oven and put oil or Ghee as per quantity. When the oil or Ghee becomes warm, we must put all marinaded meat into the pot. We have to cook the meat on medium heat, and we should mix it continuously. After some time, we have to cover it and mix it several times after a few heat by the cover. We have to cook like this minimum of 20 minutes.
We can see the oil coming out of the top of the meat after 20 minutes. Therefore, we must include 1 cup of milk in our primary cooking materials. Remember that we don’t need to add any additional water to our cooking materials. Slowly, the meat will become boiled, and the cooking soup will thicken. Now we must insert 6 pieces of Alu Bukhara. We must now cook on very low heat.
We have to mix the Sour yoghurt & pest of all nuts in this situation. We have to cook like this in the same heating condition next 10 minutes. After that, we have to mix 2 spoons of sugar & Raisins and cover it as same before.
Finally, our cooking has been finishing all steps we want. We have to close the oven heat and keep our cooking a few minutes up from the oven. Now you can present to your guest as per you want to decorate Shahi Khashir Rezala.
