 HILSHA KHICHURI
Traditional food for the monsoon season

The monsoon season has entered its peak stage. There is a proverb that is known as "Baro Anna Bangaliana." The moment it begins to pour heavily, a Bengali's thoughts immediately turn to the delectable foods that can be prepared during the monsoon season. The first word that springs to me are khichuri. On a gloomy day, finding a Bengali who doesn't enjoy having hilsa with khichuri is nearly impossible. With the help of today's recipe, you'll discover how to make the delectable Hilsa khichuri.
So I thought, Why not give our readers some tips and a quick recipe for hilsa khichuri? Then, the whole family can eat it, or you can invite a few friends over and enjoy a traditional Bengali dish?
 Materials
 * Hilsa fish is one of 500-750 grams weight.
 * Mustard oil in quantity
 * Salt in moderation
 * 5-6 green chillies.
 * 500 grams sugar powder rice.
* 50 grams of lentil and moong dal.
 * 1 teaspoon of ginger and garlic paste
 * 1 tablespoon minced garlic
 * 2 tablespoons of grated ginger
 * 2 bay leaves
 * 1 teaspoon cumin powder
 * 1 tablespoon chilli powder
 * 1 tablespoon turmeric powder
 * 1/2 cup onion
 * 1 bowl of onion, finely chopped
 Method of Preparation
 1.  Wash the rice and dal well together with clean water and drain the water.
  2. Heat some oil in a pot and add chopped onions, ginger and garlic paste, green chillies, bay leaves, salt to taste and all the other powdered spices and grind the spices well.
 3. When the masala is ground, fry well with drained rice and pulses.
 4. When the masala and rice are cooked for some time, cover them with enough boiling hot water and cook them.
 5. When the khichuri is cooked, heat mustard oil in another pan and roast the hilsa with coarsely chopped onion, butter and powdered masala, green pepper and salt to taste.
 6. When the hilsa is cooked, take half of the khichdi and spread the hilsa fish and fried onions in between.  Add the remaining mustard oil to the pan.  Cover with the remaining half of the khichuri on top.  Then steam in the oven for 15 minutes.  Be careful to keep the flame very low so as not to burn.  As a result of steaming, hilsa fish village will come to Khichuri.
 Finally, sit with your loved ones and enjoy hot, delicious and tasty hilsa khichuri on a rainy day. Don't forget to add cucumber, green pepper and onion.
