DILRUBA BEGUM FANCY
In the region of Chittagong, the local language has two terms for chicken: “kura” or “kuro.” “Dum Durus” is a flavorful culinary dish that features chicken combined with a blend of spices referred to as batter masala.
Historically, people have used this dish to entertain newlyweds and distinguished guests. As for the preparation, the process is surprisingly uncomplicated, making it accessible for anyone interested in trying their hand at it.
Materials:
Skinless whole chicken – 1 of 1.3 kg
Salt – to taste
Turmeric flour-1/2 teaspoon Many give it and many don’t.
Green chilli paste- 1 tbsp
Dry Red Chilli Bata- According to Jhal
Cumin batter- 1 tbsp
Coriander paste- 2 tbsp
Garam Masala Bata- 1 tbsp (ie, 1 large cinnamon, 3 cardamoms, 4/5 cloves, 2 bay leaves, 1 jaitri and 1/2 jaiphal crushed together)
Ginger paste – one and a half tablespoon
Garlic paste- 1 tbsp
Onion batter- 1/2 cup
For thickening the broth – 1 tbsp almond paste, 1 tbsp coconut paste and 1 tbsp poppy seed paste
Condensed liquid milk- 1 cup
Sugar – little
Water – as required
Bagar Ingredients – Oil – 1/2 cup, Onion chopped – 1 cup, Dry chillies – 2, Cardamom – 3, Cinnamon – 1 and Bay leaves – 1
How to make
– First make small holes on both sides of the chicken breast and insert the wings. And insert the legs by making a small hole at the bottom side of the rib bone.
– Now use a fork to pierce the chicken well so that the spices can enter.
– Now rub all the above spices inside and outside the chicken and marinate it for 30 minutes.
– Place the cooking pot on the stove and cover the chicken with spices and water as needed so that it boils and the broth reduces to a thick paste.
– After 15 minutes of cooking, turn it over so that both sides are cooked well and do not get burnt.
– Now when it is boiled, add milk and sugar and put the bagar in another oven.
– Fry all the ingredients of the bagar. When the color of the onion is like that of Barista, take it down and pour it into the chicken pot. and cover. After 1 time, take it down to make delicious durus kura.
