Mungdi: Traditional food of Bandarban

However, it’s not just the locals who are drawn to this area; tourists are particularly captivated by the culinary delights, with Mundi being the main attraction. The flavour of this food is unique. Bandarban is a place where no one can resist trying the food. Mundi Recipe Ingredients

1. Atap rice 1 kg

2. 2 pairs of eggs

3. Tamarind juice 100 grams

4. Red chili paste 2 tbsp

5. Chopped coriander leaves 100 grams

6. 6 chopped onions

7. Like the amount of salt

8. Cumin powder 2 tbsp

9. Soybean oil 1 cup

Mundi recipe preparation method

Making mundi is a meticulous process that requires skilled craftsmanship. For the best results, it is recommended to soak Atap rice in water for two to three days before making Mundi. Afterwards, the wet rice is carefully placed in a pot or basket with small holes, allowing the water to be drained away. Now, the soaked rice is being pounded. Machines are currently processing rice. However, for an authentic flavour, grinding the rice into a powder is necessary.

Next, the rice powder is combined with a small amount of water to create a smooth paste. Exercise caution to avoid an overly gentle approach. A specialised machine transforms the rice husk into thin, mundi-like noodles. If you prefer, you can also use a mini-noodle maker machine to create it. There is a wide variety of mini noodle makers available on the market.

Begin by boiling the Mundi in lukewarm water, similar to making noodles. First, boil the eggs, and then cut them into pieces. Mix salt, chilli powder, cumin powder, and onion powder in a bowl with boiled rice mundi.

Heat the soybean oil in a pan. Once the oil reaches the desired temperature, carefully add the rice mundi to the pan. Include tamarind paste and egg pieces. After gently stirring with a spoon, add a sprinkle of chopped coriander leaves. Enjoy a steaming plate of mouthwatering mundi.
