- Raw mango 2 kg
- Mustard oil half a cup
- Half a teaspoon of salt
- Sugar 1 cup
5. Achar masala 1 tablespoon
6. Half a teaspoon of turmeric powder
7. Chilli powder 1 teaspoon and
8. Vinegar 1 tablespoon.
1. Cumin 1 tablespoon
2. Whole coriander 1 tablespoon
3. Panchfodan 1 tablespoon
4. 4/5 dry red chillies.
Fry all the ingredients together, cool them, blend them in a blender, and break them in half, then make the pickle masala.
First, peel the mango and cut it into small pieces. Then put the pan in the oven, heat oil, and fry panchphodon. Then mix mangoes and salt, sugar, turmeric and chilli powder and keep stirring. On the other hand, the mango should be burnt in a low flame.
Water will come out of the mangoes due to adding sugar and salt. And the mango will be boiled in that water. After the mangoes are boiled, and the water dries up a little, add pickle masala and vinegar to it. Again keep stirring the mango mixture continuously so that the pickle does not stick to the bottom of the pan.
If you want to make pickle balls, you must take some time and dry the pickle by stirring it on low heat. When the pickle comes out of the pan, take it off the stove and let it cool. Then make the mango pickle balls.
Once all are made, roll the mango balls on the chilli flakes to look and taste good. Vyas can easily make a sour-salty-sweet pickle of raw mangoes at home
