Palka is the traditional food of the northern region

Pelka, or Palka, is a variant of soup-like cuisine. The primary components are vegetables or leafy greens. This dish is highly esteemed in ancient North Bengal, encompassing the northern region of contemporary Bangladesh (Greater Rangpur Division), as well as the Jalpaiguri and Cooch Behar districts of India and the Goalpara area of Assam.

In the Greater Rangpur Division, Palka and Sindul are the most preferred foods among the inhabitants. You cannot understand Palka or Sindul without first experiencing a substantial degree of flavour. Regardless of the terminology employed, it constitutes an exceedingly expensive supper.

If you don’t serve the two types of food on the plate during the visit, it will significantly diminish the experience. Those two meals must remain on the menu for the guests’ benefit.

The Palka curry uses Sanji leaves or napa greens of the same variety, while the Sindul curry uses saul, shining, maguro, or fish.

The preparation of polka incorporates a diverse array of vegetables and spices.

Some substances incorporate Napa leaf, sajne leaf, Kachu leaf, puishak, Kumara leaf, Bathua, cucumber, babri, saluk, coriander, onion, garlic, pepper, salt, and baking soda.

 After washing the jute leaves, add the Sajan and uncooked leaves, ginger-garlic paste, green chilies, salt to taste, and baking soda. Bake.

This is the procedure for preparing Palka. To prepare Palka, it is essential to whisk the mixture once it attains a thick consistency. The preparation of Palka entails harvesting napa greens together with a small quantity of bathua greens and incorporating spices, similar to the prior approach.
